Baked Eggs with Ham and Caramelized Onions

Sunday Brunch Inspo! I adapted this recipe from one of my favorite brunch spots in Charlottesville, Marie Bette! If you don’t have mini cast iron skillets I highly suggest getting some. They are inexpensive (I got mine from World Market for $8, but you can get them on Amazon too) and can be used for so many recipes!




Serves 2


Ingredients:

6 Slices of your favorite Ham

4 Eggs

½ White Onion

2 Slices of White Cheddar Cheese

3 tbsp of Butter

Optional: Chives


1. Preheat oven to 400 degrees. While the oven is preheating I like to caramelize the onions. Heat 1 tablespoon of butter over medium high heat. Thinly slice the onion (this helps them to caramelize quicker) and add it to the pan. Stir occasionally and let the onions cook for 5 to 10 minutes until they get golden brown and translucent. If I am cooking something with onions during the week sometimes I just go ahead and caramelize the onions then and save them in the refrigerator until the weekend.


2. Put 1 tablespoon of butter into each skillet (maybe less or more depending on how large your skillet is). Stick the skillet in the oven for 1 minute and let the butter melt. Using an oven mitt remove the skillet after the butter has melted.


3. Arrange 3 slices of ham on the bottom of each skillet and top with the caramelized onions. Put back in the oven for another 2 minutes. This gives the ham time to crisp on the edges. Pull the skillet back out.


4. Crack two eggs into each of the skillets and put back in the oven for 8-10 minutes this time. Keep an eye on the eggs, as you don’t want to overcook them. When you think they are about 1 minute from being done (the white is pretty much opaque) take it out of the oven.


5. Top the skillets with a slice of cheddar cheese and put back in the oven for the last time for about 2 minutes until the cheese is melted.


6. Once the cheese is melted and the eggs are cooked to your liking you can take it out of the oven and top with chopped chives. It goes great with a piece of toast!


This recipe may seem a little intimidating with all of the steps and the timing with the oven but I promise it is easier than it seems! It is definitely worth a try and can be done with so many different ingredients. Let me know if you try it or have any questions!
