Crispy Coconut Shrimp Rice Bowl

I made this recipe purely out of items that I already had in the refrigerator/freezer! It ended up being super easy and delicious so I decided to post the recipe to give you some inspiration. Whole Foods and Trader Joe’s both sell frozen coconut shrimp and I love keeping it in the freezer for appetizers, salads, and now rice bowls!

Serves 1
Ingredients:
4-5 Frozen Coconut Shrimp
½ cup White or Brown Rice
1 tsp of Minced Ginger (optional)
1 Green Onion (optional)
Topping Ideas:
Edamame
Avocado Carrot
Cucumber
Radishes
Green Onion
Sesame Seeds
Sriracha Mayo
Soy Sauce
Thai Chili Sauce
1. Preheat the oven to 425 and bake coconut shrimp for 20-25 minutes (flipping once halfway through) until warmed and golden.
2. Cook rice according to directions. I like to saute a little bit of ginger and chopped green onion with 1 tbsp of oil before adding the rice to the pan to add extra flavor.
3. Assemble bowls starting with rice and then adding the coconut shrimp. Top with your favorite toppings and enjoy!
