Crispy Pesto Salmon

This meal is delicious, takes 15 minutes start to finish and only has 5 ingredients! It is a great way to incorporate fish into your diet and leaves virtually no mess.

Serves 3
Ingredients:
1 Pack of BBQ Cut Salmon from TJs
TJs Vegan Kale, Cashew & Basil Pesto (or your favorite pesto)
½ Cup of Breadcrumbs or Panko (I prefer panko as it is lighter and crunchier)
1 tbsp of Olive Oil
1 Lemon Sliced Thinly for Garnish
1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spread olive oil or pam to prevent sticking.
2. Place salmon on the baking sheet and spread a spoonful of pesto on each piece.
3. Mix panko with 1 tablespoon of olive oil (helps it to turn golden in the oven). Put panko mixture on top of the pesto. Put 1 lemon slice on each piece of salmon.
Bake salmon in the oven for 12-14 minutes, and that’s it! Enjoy!
