Oatmeal Lace Cookies

I was looking for a festive cookie recipe to make when my roommate suggested lace cookies! Lace cookies spread out in the oven to make a buttery, crispy and delicious treat! The recipe is super easy as there is no mixer required. You simply make the dough (more of a batter consistency) on the stove and then scoop onto cookie sheets and pop in the oven. I opted to go with oatmeal lace cookies as the oatmeal gives the cookies a little more texture and bite. I followed this recipe here, but substituted 3 tbsp of almond flour for regular flour and added a chocolate drizzle on top! This recipe makes about 2 dozen cookies so it is a great recipe for the holidays to share with friends and family! Enjoy!

Makes ~ 24 cookies
Ingredients:
½ cup (1 stick) Unsalted Butter
1 cup Brown Sugar
3 tbsp of Almond Flour
2 tsp Vanilla Extract
½ tsp Salt
1 Egg
1 ½ cups Rolled Oats
¾ cup Milk Chocolate Chips (or your favorite chocolate to drizzle!)
1. Follow instructions from Simply Recipes.
2. Once cookies have baked let them cool completely. Add chocolate chips to a small bowl and melt in the microwave using 30 second intervals and stirring in between. 1 minute and 30 seconds or 2 minutes should do the trick.
3. Once the chocolate is completely melted and smooth add to a piping bag or a plastic bag. Snip a very, very small corner of the bag and drizzle the cookies with the chocolate.
4. Let the chocolate set on the cookies and enjoy! Note: I did find that the chocolate hardened quicker by sticking the cookies in the refrigerator for a few minutes.
