Chili Lime Salmon with "Cauliflower Risotto"

This meal is incredibly easy and super delicious! I tried out Trader Joe’s Mashed Cauliflower and discovered that if you do not add water like the instructions call for then it turns out more like a risotto. This meal only takes 15-25 minutes from start to finish and is super easy to make for a group. Try it out this week and let me know how it goes!

Serves 3
Ingredients:
1 pack of BBQ Cut Salmon
2 bags of TJ’s Mashed Cauliflower
1 pack of Cherry Tomatoes
Handful of Baby Spinach
Parmesan
Balsamic Vinegar
Olive Oil
Minced Garlic
TJ’s Chili Lime Seasoning
1. Set oven to broil. Slice tomatoes and toss with 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, 1 tablespoon of minced garlic. Spread the tomatoes out on lined sheet pan and broil for 5 to 10 minutes until golden and roasted.
2. Reduce oven temperature to 400 degrees. Line another sheet pan (or use the same one just remove the tomatoes) with aluminum foil. Spray with nonstick spray and set salmon on pan. Rub salmon with a little bit of olive oil and then top with the chili lime seasoning. Cook salmon in oven for 14 minutes.
3. While salmon is in the oven heat a medium sized pan over medium high heat (no oil needed). Pour two bags of the mashed cauliflower into pan and stir until heated throughout.
4. Once the cauliflower is resembling a risotto mix in tomatoes and a handful of spinach. Sprinkle some parmesan cheese in and stir to combine.
5. Plate risotto and top with cooked salmon! Enjoy!
