Garlic Herb Chicken Kabobs

Kabobs are a really fun dish to make when the weather is nice outside! They are really easy to make for a crowd and since you use the grill there is virtually no mess in the kitchen. This is a simple kabob recipe, but there are so many great variations and marinades out there. I encourage you to experiment with different proteins, veggies and sauces! One of my favorite combos is a honey garlic lime marinade on chicken or shrimp kabobs! My biggest tip when making kabobs, if using wooden skewers, would be to let the skewers soak in water for at least 10 to 15 minutes before adding the veggies and protein to ensure that the skewer does not burn on the grill. I also like to make proteins and vegetables on their own skewers so they cook more evenly. The vegetables take a lot longer to cook if you are looking for a nice char on them. I paired these kabobs with my Homemade Baba Ganoush!

Serves 3
Kabob Ingredients:
2 Chicken Breasts
2 Bell Peppers
1 Red or White Onion
Handful of Tomatoes
Handful of Mushrooms
7 to 9 Wooden Skewers
Olive Oil
Garlic Herb Seasoning or whatever seasoning/marinade you choose!
1. Soak wooden skewers in water for 10 to 15 minutes to prevent burning.
2. Wash and prep the veggies by slicing the peppers and onions into square pieces about 1 inch wide. The cherry tomatoes and mushrooms can go on the skewers whole unless they are really big and need to be cut in half. Dice chicken into 1 inch cubes.
3. Using a ziploc bag or large bowl, combine the vegetables with about 1 to 2 tbsp of oil and a generous amount of seasoning. In another bag or bowl season the chicken with olive oil and seasoning. You can do this in the same bag since the vegetables will be cooked, however I find that I typically don’t have enough space and separating them is easier.
4. After the vegetables and chicken have marinated for at least 10 to 15 minutes assemble skewers. I leave about 1 inch on either side of the skewers and prefer to seperate my chicken and vegetables.
5. Preheat the grill to medium to high heat and clean the grill if necessary.
6. Once the grill is hot, add the vegetable skewers and let them cook for about 10 minutes before adding chicken.
7. Add chicken to grill and cook for about 10 to 12 minutes, until the chicken is cooked through completely. You will want to flip them once or twice to ensure that they are evenly cooking.
8. Remove chicken and vegetable kabobs at the same time and cover with aluminum foil to keep warm while they rest. Serve with pita bread, hummus, baba ganoush and tzatziki!
