Salmon with Sesame Ginger Noodles

I have made this dish several times over the past few weeks and it never disappoints! I have been stocked up on Whole Foods Frozen Wild-Caught Sockeye Salmon but this dish would also work well with shrimp! I used Whole Grain Rice Vermicelli noodles which are thin rice noodles that are cooked by pouring boiling water over the noodles. I think any type of rice noodle, soba noodle, ramen noodle, or veggie noodle would work well in this recipe. I glazed my salmon with some teriyaki sauce, but that is completely optional and I think it would taste great with just some salt and olive oil. You can also add a variety of veggies such as carrots or peppers to this dish! I opted to bake my salmon but if you wanted to pan fry it that would be a great option as well.

Serves 2
Ingredients:
2 Salmon Filets
5 oz of Rice Noodles, Soba Noodles, Ramen Noodles or Veggie Noodles
1 cup of Broccoli Florets
⅓ cup of shelled Edamame
Handful of Peanuts
2 Green Onions
Sesame Oil
Teriyaki Sauce and Sesame Seeds (optional)
Sesame Ginger Sauce Ingredients:
3 tbsp of Soy Sauce
1 tbsp of Rice Wine Vinegar
1 tbsp of Sesame Oil
1 tbsp of Grated Ginger
1 tsp of Dijon Mustard
1 clove of Garlic Minced
1 tbsp of Honey
1. Preheat the oven to 400 degrees. Cut broccoli florets into bite-sized pieces and place on a baking sheet lined with aluminum foil. Add 1 tbsp of sesame oil and toss to coat the broccoli. Bake for 8 minutes.
2. Cook whichever noodle you choose according to the directions. Drain and set aside.
3. After the broccoli has been baking for 8 minutes, add the salmon to the sheet pan and coat with a small amount of teriyaki sauce and sesame seeds. Continue to bake for 14 minutes until the salmon is cooked through and flakey, and the broccoli is starting to crisp.
4. While the salmon is baking, in a small bowl combine ingredients for sesame ginger sauce. Pour sauce over noodles and toss to coat. Chop the green onions and peanuts for garnish. Microwave shelled edamame for a few minutes to heat through.
5. Once the salmon is done cooking, assemble the dish starting with the noodles and adding the broccoli and edamame. Top with the salmon and garnish with green onions and peanuts. If you want to add some heat you could add red pepper flakes or sriracha! Enjoy!
