Shrimp Caesar Salad

I threw this dish together super last minute with items that I had in the refrigerator! A caesar salad is really a blank canvas and can be spiced up with different proteins and vegetables to create a delicious and filling salad! For this recipe I added shrimp seasoned with Trader Joe’s Chili Lime Seasoning, tomatoes, homemade croutons made with leftover french bread, pumpkin seeds and parmesan cheese! 




Serves 3 


Ingredients:

3 Romaine Hearts (or 1 per serving)

¾ to 1 lb of Shrimp 

1 cup of Cherry Tomatoes

2-3 pieces of Bread (french, white or wheat will work!)

Handful of pumpkin seeds

Caesar Dressing 

Shredded Parmesan 

Salt

Pepper

TJ’s Chili Lime Seasoning

Garlic Salt

Olive Oil 


1. Preheat oven to 400 degrees and line sheet pan with aluminum foil. Dice bread into small pieces and toss on pan with 1 tbsp of olive oil and a dash of garlic salt. Bake for about 10 minutes flipping about halfway through. You will want to watch these closely as it is really easy to burn! You are just looking for a golden brown color. 


2. Chop romaine and wash and dry thoroughly. Wash and slice cherry tomatoes.  


3. Heat about 1 to 2 tbsp of oil in a large pan over high heat. If using frozen shrimp make sure they have been thawed all the way before cooking. Add shrimp to pan with about 1 tbsp (more if you want more flavor) of TJ’s Chili Lime Seasoning. Cook shrimp for about 2 minutes on each side and remove from pan to let cool. 


4. Assemble salad starting with the romaine and topping with shrimp, tomatoes, croutons, pumpkin seeds, dressing, salt, pepper and some parmesan cheese!

Homemade Caesar Dressing

This is by no means a classic caesar dressing, I really just threw it together with items I had in the refrigerator, but I really like how it turned out so I thought I’d share! 


Ingredients:

¼ cup of Mayonnaise

¼ cup of Grated Parmesan Cheese

2 tablespoons of Milk

Juice of Half a Lemon

Small spoonful of Dijon Mustard

Small spoonful of Minced Garlic (garlic salt would work too)

Dash of Worchestire Sauce

Dash of Tabasco

Pepper


1. Blend all ingredients in a blender or food processor and spoon over salad! Enjoy!
