Shrimp Pasta with Lemon White Wine Sauce

This is another pasta dish that I made with ingredients I already had on hand! A lemon white wine sauce is an easy and delicious way to create a fancy pasta dish in no time.

Makes 3 Large Portions
Ingredients:
8 oz of Angel Hair Pasta or your favorite Pasta!
1 Zucchini
1 cup of Cherry Tomatoes
¾ pound of Shrimp (21-30 Count, 5 to 6 shrimp per person)
½ White Onion
2 cloves of Garlic, minced
2 tbsp of Butter
1/4 to 1/3 cup of White Wine (whatever you have on hand works)
1 Lemon
Salt and Pepper
TJ’s Everyday Seasoning (combination of sea salt, mustard seeds, black peppercorns, coriander, onion, garlic, paprika, and chili pepper)
1. Heat 2 tbsp. of olive oil over medium heat in a medium sized pan. Fill a medium to large sized pot with water, add a pinch of salt and bring to a boil. Prep veggies - finely dice the white onion, halve the cherry tomatoes, dice the zucchini and mince the garlic.
2. If you are using frozen shrimp, make sure it is thawed all the way through and then add shrimp to the pan. Season with TJ’s everyday seasoning, or salt and pepper, and cook for 3 minutes on each side until shrimp is opaque and cooked through. Remove from the pan.
3. Add another 2 tbsp. of olive oil to the pan and add diced zucchini. The zucchini will take the longest to cook, so saute it on medium heat for about 3 to 4 minutes on its own. Next add halved cherry tomatoes, onion and garlic to the pan. Add a pinch of salt and pepper to season.
4. Once vegetables are tender and cooked down add 2 tbsp of butter, white wine and the juice of one lemon. Let the sauce come to a boil and then reduce heat to low.
5. While the vegetables are cooking down, add pasta to boiling water and cook according to directions. Angel hair pasta cooks quickly so try and time it right where you can take the cooked pasta and place it directly into the pan of sauce and vegetables.
6. Toss pasta, veggies and sauce together and plate. Enjoy!
Note: I love this pasta without cheese, but if you wanted to add grated parmesan go for it!
