Super Simple Sheet Pan Salmon and Broccoli

This is one of my new favorite weekday meals! Super easy and delicious! I never really use measurements in the kitchen so adjust the sauce to your taste preferences! Trader Joes was out of broccoli so I ended up using frozen and I couldn’t tell the difference! I got this recipe from cookbook author Serena Wolf, I highly suggest giving her a follow on instagram, she is hilarious and has the best recipes!!

Serves 3
Ingredients:
Pack of BBQ Cut Salmon from Trader Joes
1-2lbs of Broccoli
1 Can of Mandarin Oranges
Crushed up Peanuts
Sliced Green Onion
Sesame Seeds Optional
Olive Oil
Sesame Oil
Asian Dressing Recipe:
3 tbsp Soy Sauce
2 tbsp Rice Wine Vinegar
1 tbsp Honey
1 tsp Sesame Oil (a little goes a long way)
1 tsp Ground Mustard
Squeeze of Lime Juice
1. Toss broccoli on a sheet pan with a splash of olive oil and sesame oil. Roast at 450 degrees for 10-15 minutes until it just starts to brown. Season salmon with a little bit of olive oil, salt and pepper. After broccoli has started to brown add salmon to the sheet pan and bake for 5 minutes.
2. Mix together sauce ingredients.
3. After the salmon has baked for 5 minutes remove it and drizzle sauce over salmon (reserve some for later).
4. Bake salmon for another 8 minutes or until salmon flakes.
5. Once salmon is done plate broccoli and salmon. Add a scoop of mandarin oranges to the broccoli and top salmon with remaining sauce, crushed peanuts and green onion.
