Citrus Salad

I saw some blood oranges at Trader Joe’s and immediately wanted to make something with them! I was inspired by the citrus salad at 2Amys (an amazing pizza place just north of Glover Park in DC) and created my own version with avocados! You might think the addition of capers is a little strange but I promise it adds just the right amount of salt! I baked some Trader Joe’s Wild Alaskan Sockeye Salmon to go with the salad and ended up with a vibrant and delicious meal!

Serves 3 to 4

Ingredients:

3 Blood Oranges

5 Naval Oranges

½ Red Onion

1 Avocado

2 tbsp of Capers

Red Pepper Flakes

Olive Oil

1. Peel and slice oranges. I use a knife to cut off the skin and remove the white part. Thinly slice the red onion and avocado.

2. Assemble oranges, red onion and avocado on a plate and top with capers, red pepper flakes and a drizzle of olive oil. Enjoy!

Tip: The blood oranges at Trader Joe's come in a 2 pound bag so you will definitely have leftovers. On a whim I made a blood orange margarita with the leftover blood oranges, lime juice, water, tequila, agave and ice!
