Honey Garlic Roasted Carrots

This has been a go-to side dish of mine for the past few years! It is a super easy way to elevate a basic carrot dish. You can use any type of carrot you prefer here, for this specific recipe I used Whole Foods Rainbow Carrots but the Trader Joe’s Les Petites Rainbow Carrots would work great as well! Once again for side dishes I recommend a little less than ¼ pound per person - depending on how many sides you are serving!

Serves 6-8
Ingredients:
1-2lbs of Rainbow Carrots
2 tbsp. Honey
2 tbsp. Butter
2 tbsp. Minced Garlic
Parsley to Garnish
1. Preheat oven to 400 degrees.
2. When using the Whole Foods Rainbow Carrots I had to wash, peel and cut them down to the size I was looking for. This of course depends on the carrot you are using so I would recommend using baby carrots or the TJ’s Rainbow Carrots if you are looking to save time.
3. Melt butter in microwave for 15-20 seconds. Mix in honey and garlic and a pinch of salt.
4. You can use a sheet pan, but I prefer to use a pyrex baking dish here to prevent the butter mixture from spilling over into the oven. Place carrots in pan or dish and toss with the butter/honey/garlic mixture.
5. Roast at 400 for 30-40 minutes, tossing occasionally until carrots can easily be pierced with a fork.
6. Remove carrots and top with parsley - enjoy!
