Roasted Carrots with Goat Cheese and Parsley

This is a super easy fall side dish that goes great with any protein! I used goat cheese, red pepper flakes and parsley, but there are so many different combinations you could try including feta,  sriracha or even topped with pumpkin seeds! 



Serves 2-3


Ingredients:

1 bag of Trader Joe’s Les Petites Carrots

Goat Cheese

Parsley

Red Pepper Flakes

Olive Oil

Salt

Pepper


1. Preheat oven to 400 degrees. Line sheet pan with tin foil. Mix carrots, olive oil, salt, pepper and red pepper flakes together. Roast carrots for 20-30 minutes, mixing once about halfway through, until tender. They do take longer than you think to get tender. I suggest testing them out by seeing if a fork easily goes through a carrot.


2. Top with goat cheese and chopped parsley, enjoy!
