Sweet Potato Casserole with Marshmallows

Sweet potato casserole can be super time consuming with roasting the potatoes and then mixing them to get the perfect consistency. This year I discovered Trader Joe’s Mashed Sweet Potatoes and I am never going back. This cuts the time in half and you are guaranteed to get a great consistency with little to no effort! The directions say to heat the mashed sweet potatoes up over the stovetop, however you can also do it in the oven. Let me know if you try this recipe out!



Serves 6-8 


Ingredients:

2-3 bags of TJ’s Mashed Sweet Potatoes

2 tbsp. of Brown Sugar

1 tbsp. of Cinnamon

4 tbsp. of Butter

1 bag of Large Marshmallows


1. Depending on which you prefer, put the mashed sweet potatoes in a saucepan on the stove or in a baking dish to go in the oven. For the stovetop, heat the potatoes over medium heat and in the oven set it to 350 degrees. 


2. Add ¼ -½ a cup of water to the mashed sweet potatoes and let heat up. Stir occasionally until mixture becomes smooth. 


3. Add in brown sugar, cinnamon and butter and mix until completed dissolved and incorporated. 


4. If you heated them up over the stove top now transfer into a baking dish. 


5. Cut marshmallows in half and top the sweet potatoes with the cut side up. This side melts easier and browns quicker since it does not have the coating on it. 


6. Bake in the oven at 350 until the marshmallows start to brown - make sure to keep an eye on them because they can go from golden to burnt in no time. 


7. Serve warmed - enjoy!
