Tomato, Avocado & Red Onion Salad + Parmesan Roasted Artichoke Hearts

These are two of my favorite side dishes right now and they go great together! I put the tomato, avocado & red onion salad over a piece of baked cod and had the artichoke hearts as a side. So easy, healthy and delicious! Let me know if you try this recipe and what you pair it with! 



Serves 2


Ingredients: 


Handful of Cherry Tomatoes 

1 Avocado 

½ of a small Red Onion

1 Lemon

1 bag of frozen or canned Artichoke Hearts

1 tbsp of Minced Garlic

Parmesan Cheese

Salt


1. Chop cherry tomatoes into halves or fourths and dice the avocado and red onion. Toss in a small bowl to combine and top with a dash of salt and the juice of half a lemon. 


2. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil and toss artichokes with 1 tbsp of olive oil and minced garlic. Bake for 15 to 20 minutes until artichokes start to brown. 


3. Remove artichokes from the oven and top with the juice from the other half of the lemon, salt and pepper and some parmesan. Enjoy!
